Quarantine Cooking

My favorite thing to do? Eating. Most of my travel adventures are based around food. Far or near, most of my plans usually consist of a restaurant or local dish I want to try out and then I plan a full trip around it. Roundup from my past posts, NOLA = beignets, Ireland = Guinness, Italy/France = all the carbs + wine. I’ve even drove hours to check out local coffee shops. All to say, I miss it. I miss wandering around to try new things and delicious bites.

To cope with not being able to go and try delicious foods, I’ve been cooking and baking more. Sometimes it works out much better than I anticipated and sometimes I don’t know what I ended up with… But it is fun and helps pass the time! And I definitely feel more accomplished in a quarantine day making something then hours of binging Criminal Minds. Don’t get me wrong, I can watch Spencer Reid all day, but I need some sustenance to get me through the binges.

I got a couple great cookbooks to assist with these adventures. Salt Fat Acid Heat by Samin Nosrat. I watched the Netflix show and started following her, she’s so awesome! I had to get the book. Putting these few simple cooking tips together and amplifying them, is genius! And I can’t wait to try some of her combos. I’ve also been following Emiko Davies on Instagram and love her posts! Seriously, I want her to give me a tour of what to eat in and drink in Italy! Her recipes always look so effortless and fresh, I wanted to give some a try! So I picked up her cookbook Tortellini at Midnight.

So long post, getting to the point, I may be posting a lot of food/cooking blogs. Since I can’t travel to eat and try new things, I’m gonna transport myself in the kitchen. Couple things I’ve given a whirl from these ladies was a focaccia recipe from Samin, combined 2 tiramisu recipes & took a fresh Orecchiette recipe from Emiko.

First was the focaccia!

I made a tuna sandwich with it!

I can’t find the pasta pics (I also poured WAY too much salt in the pot and it came out too salty, but I still ate it). Here’s the traditional + strawberry combined tiramisu, I didn’t buy enough mascarpone, so it turned out runny.. Still delicious though. I ate some before I realized I really shouldn’t be eating the runny eggs with bits of mascarpone.

And now I’m off… to work, try to learn some French, read a little bit… and find a new recipe!
