Hello again, Wanderloves! Welcome back!
As mentioned on my last post, since quarantine has begun, I’ve had a lot more time to spend in the kitchen! I’ve always liked to make delicious foods, just not as much as I enjoyed eating it. So I often found myself buying or going out to eat vs. trying it at home. But now I can’t leave and I’ve kind of exhausted all my Uber Eats options.
One of my favorite ways to eat fruit is inside of a baked good! I started to see lots of pretty galettes on my insta feed and got inspired. I believe I’ve made it before, but I don’t recall what I had put inside of it. Peaches are in season and I always seem to have blueberries around, so that seemed to be a good combo.
To create this pretty dish I followed this recipe! Disclaimer: I am still upset finding out about the Bon Appetit work culture, especially to my faves like Sohla El-Waylly! As I just did a quick Google search to credit the right person for this recipe, I saw the news that Sohla along with the lovely Priya Krishna and Rick Martinez have left the Test Kitchen. They are all amazing cooks and they will kill it no matter what! I just hope along with Bon Appetit, all companies truly recognize the need and benefit of supporting minorities. I basically followed it aside from the plums I had blueberries and I only had lemons vs. limes. So rookie mistake… I’ve constantly been hearing about how Kosher salt is better than Iodized. I mean right back to the Test Kitchen *cough cough* BAZ *cough cough*! And then literally the next day, I was listening to Home Cooking with Samin Nosrat and Hrishikesh Hirway and Samin explained how there are different types of Kosher Salt. WHY?! I just picked the cheapest Kosher salt on my online grocery shopping, when I couldn’t find the infamous Diamond salt as an option. So just as as she explained, the non-Diamond Kosher salts are MUCH saltier than the Diamond version. Which resulted in a salty Galette crust. All to say – follow the recipe with Diamond Kosher salt or regular salt!
In the end it was still delightful! First sitting warm and fresh, I threw a scoop of ice cream on there and sweet & salty FTW! Second time I made some fresh whipped cream, which I can eat on it’s own!
