I do love cooking. Sometimes I get lazy and just want to order in or go out. I mean you can see my other posts, I just like food. If money was endless, I’d definitely just eat around the world, all day every day. But I don’t have an endless supply of moolah, so I cook and try out new recipes. Lately, I’ve been enjoying trying out recipes from recipe books.
Back at the beginning of the quarantine I tried out quite a few new recipes. One of the things I gave a go was focaccia! It was surprisingly easy to make and so delicious. I mean when are carbs not delicious? So I started making it pretty frequently, every few weeks or so, and adding different toppings. I always used some kind of recipe as reference. But then, I got just a little cocky. I ‘knew’ the steps and basics, so I started trying different things or being a bit too confident with my recipes.
It’s such a simple recipe – or at least the simple recipe is what makes it so good. How did I blunder it then? Well the first blunder was… When I ‘tried’ to be healthier. Instead of looking up a recipe asking for whole wheat flour, I just thought I could sub the all-purpose. Welp, let me tell ya, you shouldn’t do that. It was just not nearly as flavorful and ended up too dense.
Blunder 2? It was my latest go at it… I was so ready and excited because I had figs and burrata, it was supposed to be the ultimate focaccia! The first misstep? I added 3 Tablespoons of salt in my bread dough, instead of… 3 teaspoons. Damn that uppercase T. I don’t even know why I thought that made sense. I couldn’t pick out the salt… so I just thought eh it’ll be ok, just a tad salty. Then I made some caramelized onions, and for some reason dumped a whole ton of salt AGAIN! I don’t know what was going on with the heavy salt pour into everything. Anywhos, I went ahead and baked up my focaccia and well. It looks wonderful, and was completely inedible.
So what is the point to this post? Follow your recipes. Well… try things out, but make sure it actually makes sense. Enjoy the process, even if you can’t eat it at the end! And keep an eye on your salt pours, bae.
