Cooking With Moi | The Most Decadent, Devilishly Delicious Brookie Ever

Now let me start by saying, I did not make this recipe. To get the recipe and see where it came from please check out this video! This NYT Cooking video popped up on my YouTube page around when it aired and it sounded yummy, so I started watching it… And well Melissa Clark, you sold me on trying it… and it sure did NOT disappoint.

Fun fact, I love shortbread, I’d say it’s my favorite cookie! I feel like it’s super overlooked and underrated as a cookie. But it is so simple, buttery and delicious. This was the first time I ever saw what is basically a brookie use shortbread as the cookie or since it’s so crumbly, almost even a crust layer. Just complete genius! And to Melissa’s point in the beginning, who even likes cake-y brownies? Ooey Gooey all the way!

You know… I made it that same evening. I somehow just had all the ingredients lying around… Cause you never know when you are going to find the perfect recipe. To say this was one of the most delicious, devilishly delicious, things I’ve ever made is an understatement. It was rather dangerous to have it at home, because I would just nibble a little square at a time, which would turn in to a slice, which turned into a whole row. This is why I haven’t made it again. Unless it is for an occasion or to gift someone… I cannot be left alone with this dessert.

I wrote about this because clearly I’m still thinking about it. And I want you all to experience it, even if it’s just once in your lifetime like me. But let’s be real, I will meet this brookie again, maybe just in another decade or pandemic.
